Drying Problems

Problems Cause Prevention
Moisture on the jar or the container Incomplete drying. Test several pieces for dryness.
  Pieces uneven Cut evenly.
  Dried food left at room temperature too long. Cool quickly and pack.
Mold on food. Incomplete drying. Check several pieces for drying.
  Container not air tight. Use air tight container.
  Stored at high temperature. Store at or below 60-70 F.
Brown Spots on vegetables. Dried at high temperature. Vegetables should be dried at 125 F.
  Over drying. Check for drying frequently.
