Introduction

This collection of camp recipes supports my efforts to encourage Scouts to discover the rewarding world of camp cookery, the importance of nutrition in a person's life, and how proper menus and cooking skills add to the enjoyment of the camping experience, and, indeed, life in general.

It is also an attempt to ensure decent meals for myself while on troop outings. No more canned chili for THIS scoutmaster!

I have searched literally dozens of cookbooks, pamphlets, handbooks, and handouts. I have selected recipes that I consider the best and most appropriate for camp use, without being unduly complicated or requiring an excess of ingredients. Some are good for beginning chefs, while some are suitable for more experienced cooks. Some recipes are suitable for short-term camping, while others are suitable for long-term camps or base camp kitchens. I have a definite preference for "classic" camp recipes, but embrace modern advancements where advantageous. So use what you can, and keep the rest for later.

Many Dutch oven recipes have been included, although virtually any baking recipe can be done in a Dutch oven. There is a separate chapter for Trail cooking, but many chapters contain recipes useful for backpacking , also. I have attempted to format each recipe into the actual series of steps and actions required to prepare the dish, and have tried to include ALL items in the ingredients list that are needed to prepare the dish.

I have several items slated for future additions. I have delved into vegetarianism looking for nutritionally balanced meatless meals for backpacking and canoeing. I have found several good recipes, but they have not been included yet. I have a chapter started on making meat jerky and home food dehydration, and using dried foods. There is a general backlog of recipes that I have selected for inclusion, but more pressing matters keep interrupting. I have an interesting collection of SPAM recipes that I have resisted adding, but my troop keeps requesting them, so who knows... SPAM Hawaiian, anyone?
